Research Progress of Gallic Acid from Tara

Abstract: Tara is one precious economic tree with rich tannin in pods. The gallic acid from Tara pod hydrolysis can be prepared for pyrogallic acid and gallic acid methyl ester. We briefly analyzed the Tara market and reviewed gallic acid preparation methods, including acid, alkali, fermentation and enzyme methods. Then, we introduced the applications of gallic acid in food, chemical and medicine with the prospect.
